Winemaker Mauritius Naude uses the appassimento method for this dessert wine, as in Vin Santo of Tuscany: fully sun-ripened Muscat of Alexandria grapes are partially dried on a bed of organic straw and dried Rooibos (Red Bush) before crushing, concentrating the sugars and developing intriguing notes. The Western Cape is the only area in the world where Rooibos can be cultivated.
